Day 1 – Friday 29 May:  Surrender to the Rhythms of Andalucía …

From the moment you step out of your private transfer, you’re welcomed to a lavish 5-star hotel situated in the heart of Sevilla.

Tonight marks the start of a holiday that transcends the ordinary.  Join us in a celebratory stroll followed by a relaxed dinner at one of my favourite tapas bars. This is your chance to slow down, embrace the present moment, and truly live the good life.

Day 2 – Saturday 30 May: A lesson in Andalucían Style …

Step off the well-worn path and into the quieter, more creative side of Sevilla—where hidden studios and heritage boutiques reveal a city still deeply connected to craft. You’ll meet local makers keeping centuries-old traditions alive, alongside a new generation blending the old with the beautifully unexpected. It’s a chance to explore at a slower pace, connect with the people behind the pieces, and discover a more intimate layer of the city—one most travellers never get to see.

As the day winds down, we’ve organised a memorable Andalucían dinner.

Day 3 – Sunday 31 May:  A special Sunday in Sevilla …

This morning, we’ll take a richly layered walk through the historic heart of Sevilla—a city shaped by centuries of Christian, Jewish, and Moorish influence. Beginning in the old Jewish quarter of Santa Cruz, you’ll wander through narrow lanes and hidden plazas as your guide brings to life stories of convivencia—a time when three cultures coexisted and left their mark on the city’s soul. From there, we’ll visit the soaring Seville Cathedral, where sunlight filters through stained glass and Columbus’s tomb lies in quiet grandeur, before continuing to the Real Alcázar—a palace of extraordinary beauty and craftsmanship. Built by Moorish artisans for Christian kings, it’s a masterpiece of mudéjar design and living proof of an era when art transcended borders.

Afterwards, it’s time to experience one of Spain’s most beloved rituals: Sunday lunch. We’ve reserved a table at a local favourite known for its seasonal produce and relaxed Andalusian flair. This isn’t fine dining in the traditional sense—it’s generous, joyful cooking that invites you to settle in and stay awhile. Expect bold flavours, plates made for sharing, and the kind of long, lingering lunch that gently slides into afternoon.

Day 4 – Monday 1 June:  A Day in the Dehesa …

Today we venture into the hills of the Sierra de Aracena for an intimate, behind-the-scenes look at one of Spain’s most prized culinary traditions: jamón ibérico. At a small, family-run secadero, you’ll learn how this delicacy is cured using age-old methods—then taste the result for yourself. From there, we’re welcomed onto a private estate, where black Iberian pigs roam freely beneath ancient oaks. After exploring the land and meeting the family behind it all, we’ll settle in for a long, relaxed lunch at the farmhouse table—an experience that’s as generous and soulful as Andalucía itself.

Day 5 – Tuesday 2 June:  Surrender to the Countryside …

Enjoy the morning at your own pace, exploring Sevilla at leisure.

In the early afternoon, we’ll take a short drive to Las Cabezas de San Juan. Halfway between Sevilla and Jerez, down a quiet country road lined with sunflowers and olive trees, we’ll arrive at our private retreat: a soulful 18th-century hacienda where time seems to soften. With its faded terracotta walls, fragrant gardens, and breezy verandas perfect for slow morning coffees, this is a place designed for rest. Wander through shaded courtyards, dip into one of three serene pools, and let the stillness of the Andalusian countryside invite you to fully exhale. This isn’t about doing more—it’s about doing less, beautifully.

In the evening, unwind with a leisurely stroll through the gardens, vermút in hand, followed by a welcome dinner under the stars crafted by our personal chef.

Day 6 – Wednesday 3 June:  A Day to Simply Be…

Today is all about slowing down and soaking up the stillness of the hacienda. With nothing scheduled, you’re free to spend the day exactly as you like—reading in a shady corner, floating in the pool, or simply watching the light shift across the olive trees. We’ve also set aside time for a massage, thoughtfully arranged for each of you throughout the day. Whether yours is in the morning, afternoon or early evening, it’s a gentle invitation to pause, breathe, and enjoy this rare moment of complete ease.

Day 7 – Thursday 4 June: Horses, Sherry & Seafood

Today begins with one of Andalucía’s most graceful traditions—the art of the dancing horse. At the Real Escuela Andaluza del Arte Ecuestre, you’ll witness an unforgettable performance where precision, elegance, and centuries of horsemanship come together in a setting that feels timeless.

From there, we’ll head to the coastal town of Sanlúcar de Barrameda, where the Atlantic breeze shapes one of Spain’s most distinctive wines: manzanilla. You’ll visit a local bodega for a private tasting, followed by a long, leisurely seafood lunch by the water. Fresh local catch, chilled wine, and river views set the tone for a day that balances movement and stillness—Andalucía at its most soulful.

Day 8 – Friday 5 June:  An Andalucían Kitchen Experience …

Set in a countryside kitchen surrounded by olive groves and open sky, this hands-on cooking experience is a celebration of Andalucía’s rich flavours and the land that brings them to life. Using seasonal ingredients sourced from nearby farms and markets, you’ll prepare a simple, soulful meal rooted in local tradition. Along the way, you’ll hear stories, learn techniques, and reconnect with the joy of cooking slowly and with care—before sitting down together to share the feast, wine poured and conversation flowing, just as Andalucíans do.

Day 9 – Saturday 6 June:  Flavours of the Sierra …

Today we leave the plains behind and head into the wild beauty of the Sierra de Grazalema, a rugged, untamed corner of Andalucía known for its dramatic peaks and deep-rooted culinary traditions. With a local host leading the way, you’ll visit three small producers—a family-run winery, a mountain cheesemaker, and a traditional olive mill—each offering a taste of the region’s rich agricultural heritage. From bold wines and queso payoyo to robust, golden olive oil, every stop connects you to the land and the people who know it best. We’ll finish with a long, seasonal lunch at a hidden local spot—simple, soulful, and full of southern warmth.

Day 10 – Sunday 7 June:  Choose your own Andalucían Adventure …

Your last day at the Hacienda is yours to spend as you wish. Maybe you’ll linger by the pool, book one more massage, or enjoy a slow horse ride through the countryside. You might take a gentle hike, dive into an art or pottery class, or simply find a quiet spot under the olive trees to pause and reflect. There’s no right way to spend today—only what feels good. While we’re not quite saying goodbye to Andalucía, this part of the journey is softly closing. Soak in the stillness, the warmth, and the way this place has held you, and carry that with you as we move forward.

As the sun sets on our final evening, we’ll gather beneath the open sky for a true taste of Andalucía’s heart and soul. We’ll begin with a relaxed alfresco flamenco class—feel the rhythms and steps come alive, telling stories of passion and joy. Then settle in for a live flamenco performance—raw, vibrant, and unforgettable. The flicker of candlelight, the strum of guitar, the snap of fingers—it’s a moment that lingers long after the last note fades. To close the night, we’ll share a slow, leisurely dinner beneath the stars, savouring seasonal flavours, good wine, and the warmth of connection—the perfect way to honour this journey.

Day 11 – Monday 8 June:  A Private Taste of Cádiz: Sherry & Salt…

Today’s journey is as much about the places between as the destination itself. En route from the Hacienda to our next private luxury estate, Casa La Siesta, you’ll visit the ancient salt flats just outside Cádiz—where sea, sun, and time have shaped salt harvesting for millennia, a tradition rooted in Phoenician and Moorish heritage.

After a rustic lunch amid these timeless landscapes, we continue to Chiclana de la Frontera in the Marco de Jerez, the only region in the world where true sherry can be made. With insider access from my trusted local guide, you’ll explore a private family-run bodega closed to the public, witnessing the sherry-making process from grape to oak barrel, and taste rare sherries aged over 40 years, including a crisp fino straight from the cask.

Later, arrive at Casa La Siesta, a serene, beautifully restored farmhouse nestled in sunlit hills near Vejer. With whitewashed walls, fragrant gardens, a saltwater pool, and breezy, welcoming spaces, it invites you to slow down and truly arrive. We’ll close the day with a chilled welcome dinner, savoring seasonal flavours in the fresh, coastal air.

Day 12 – Tuesday 9 June:  A Taste of Moorish Andalucía …

To truly understand Andalucía, start in the kitchen. Food here is more than nourishment—it’s heritage, identity, and connection. This morning, a local chef will guide you through the whitewashed streets of Vejer, gathering ingredients from her favourite shops in a slow, intentional rhythm. Back at her beautiful home, you’ll prepare vibrant Andalusian dishes rich with Moorish influence, tasting the legacy of Al Andalus in every citrus note and warm spice. Whether cooking or sipping wine, this is a space to connect, learn, and share. After a sun-drenched lunch together, the afternoon is yours to wander Vejer’s stunning streets at leisure, soaking in its timeless charm.

Day 13 – Wednesday 10 June:  Barefoot in Tarifa …

Today we journey to Tarifa—the southernmost point of Spain, where the Atlantic meets the Mediterranean and Morocco shimmers across the water. Your morning is free to soak in Tarifa’s laid-back charm, browsing its bohemian boutiques filled with handwoven textiles, sun-faded linens, and unique treasures. When hunger calls, we’ll share lunch at a local favourite owned by a dear friend—expect soulful Andalusian flavours and a warm welcome that lingers long after the last bite. Later, we’ll stroll along the beach before settling in at one of Tarifa’s beloved beach bars, feet in the sand, salt in the air, surrounded by the town’s sun-kissed kitesurfers, with nowhere else to be.

Day 14 – Thursday 11 June:  Ibizan Vibes, Andalucían Soul …

Welcome to a stylish day by the sea, where Andalucía’s laid-back surf vibe meets Ibiza-inspired energy. At this stunning beach club, unwind by the sparkling pool, stroll the powdery white sand just steps away, or dip your toes in gentle waves. Lunch is a fresh, Mediterranean feast served in a breezy open-air restaurant, paired with cool cocktails and smooth daytime tunes. With pool, chill-out, rooftop, and restaurant spaces to choose from, you can shape your day however you like—whether floating, reading, wandering, or sharing laughter with new friends. It’s the perfect blend of indulgence and ease, an Andalusian seaside escape all your own.

Day 15 – Friday 12 June:  The Last Exhale … 

Our final day at the finca is a soft pause—a gentle landing after the deep breath of Surrender to Spain. There’s nothing you need to do but be: linger over breakfast, stretch by the pool, or take a last stroll through the olive trees. This is the savasana of the journey, where everything softens and settles. While we’re not truly saying goodbye to Andalucía, we close this chapter with intention, letting stillness seep in to carry with us.

Tonight, we’ll gather one last time for a relaxed dinner—sharing stories, laughter, and a final toast to the week’s gifts. Today is about honouring all that Andalucía has given you and letting it stay long after you leave.

Having completely embraced all that Andalucía has to offer, it is time say farewell to one another and our taste of the good life (until we all meet again back in Australia, that is!)

Tucked away in one of Sevilla’s quieter old-town streets, you’ll find Casa Palacio Don Ramón. This 18th-century palace has been lovingly restored into a boutique hotel where every detail feels considered—crafted, even. Halfway between Seville and Jerez, down a quiet country road lined with sunflowers and olive trees, you’ll find Hacienda de San Rafael—a soulful estate where centuries-old charm meets relaxed elegance.

Originally an 18th-century olive farm, the hacienda has been thoughtfully reimagined into a peaceful countryside retreat. Think faded terracotta walls, Moorish arches, and old wooden doors that open onto fragrant gardens and sun-dappled courtyards. The rooms are spread across the main house and three private casitas—each one simple yet refined, with antique touches, handwoven textiles, and breezy verandas perfect for a slow morning coffee.

Wander the grounds and you’ll find hidden corners to pause, serene pools, and a stillness that invites you to fully let go. Meals are a highlight here—fresh, seasonal, Andalusian, and always shared around a generous table, often under the stars. The hacienda’s long-serving team make everything feel effortless, like staying with old friends who know exactly what you need.

Casa La Siesta, Vejer de la Frontera. This gorgeous finca is just for us. 

Set among the sun-drenched hills outside Vejer de la Frontera, Casa La Siesta is the kind of place that feels like a well-kept secret. A beautifully restored Andalusian farmhouse turned private hideaway, it’s all whitewashed walls, terracotta tiles, and gardens full of lavender and rosemary. Quiet. Elegant. Effortless.

Inside, the spaces are generous and welcoming—think reclaimed wood, soft linens, stone floors, and a breeze that moves gently through open shutters. There are quiet corners to curl up with a book, a bar where you can pour yourself a glass of something cold, and long tables that turn simple meals into slow, sunlit feasts. Every room has its own charm, with high ceilings, handmade details, and views that stretch across olive groves and open fields.

Step outside and time seems to soften. There’s a saltwater pool surrounded by bougainvillea, a kitchen garden bursting with seasonal produce, and terraces made for morning coffee or starlit conversations.
